Baileys Local Food Buying Club - Weekly Pickup Reminder

***This "Pickup Reminder" email currently goes to all Members who have chose to receive "Notifications" (in Account Settings). We are considering only sending it to members who have ordered for the current week and also posting it to http://baileyslocalfoods.blogspot.com/. But then you might not be able to swing by and get that Sweet Corn on the spontaneous table. If you have an opinion on this, please let us know. We may not reply to each individual note if we get a lot of responses, but we will read them and consider your opinion. Thanks!

If you put in an order this week it will be ready for you to pick up on Friday, July 31 from 3:30 until 7:00PM in Hilliard Hall at the First United Church at 16 William Street West in Waterloo. You can check your order by logging in at http://baileyslocalfoods.ca/ordering.

Some notes for this week:

  • We have No Spray Sweet Corn on the Spontaneous Table this week! $2.75 for 7 ears from Edward and Selema Martin
  • Lydia was short of small Spanish Onions and so members can take one big Walla Walla Onion instead of three small Spanish.
  • If we don't get medium sized carrots, smalls can be substituted. They should grow bigger soon!
  • We have been given FREE canning jars for the taking. A buying club member got over 100 from his grandma and does not need them all. Look for them in the corner with the bulletin board.
Self Checkout Reminder
This Friday we can offer the SELF CHECK-OUT option to all of you who are paying by cheque! We hope that this will help speed up the check out process for some of you who want to work out your total yourself.  We did all self check-out last year and now we are returning to our roots.
We choose to trust our members.  You know that if we lose money due to missing items or math mistakes, we won't survive.  We will still have the regular check-out option for those of you who prefer it.

Produce bags
Some items are sold by the quart/litre box. The boxes we have are for measurement only. Please bring small bags to bring these items home in.

  Please enter through the white kitchen door off Caroline Street.

Due to construction on William Street you may have to cross a stream of water that runs through the parking lot. Please wear appropriate footwear to reach the church and your order!

You will find a pickup slip with your name on it listing the items that you ordered this week. Pick up all your items (including those in the fridges and freezer), check out our spontaneous table then head to our checkout area.

We will have extra items for you to purchase on our Spontaneous Table in front of the blue cupboards just in case you forgot anything. Anyone can purchase items from the Spontaneous Table. You don't even have to be a Member!

There will be room to socialize and mingle. Expect your pick-up to take awhile.

In out checkout area, please help us and our volunteers by removing all items from your bag for the checkout process. Please be patient as this area will likely be quite busy. We are piloting a self checkout system this week. Please bear with us. If it works well we will open the option to others.

We accept payment in cash or cheque (made out to Bailey's Local Foods). The total from your shopping cart is always approximate. We will try to ensure that you only pay for the items available this week as local food can sometimes be unpredictable and items that are priced by the pound are approximate on the order form.

When writing cheques, please ensure that the date is correct (it's 2009!) and that the numbers you write (digits and words) match. Also, if you make your cheque out to anything other than Bailey's Local Foods the bank won't cash it. We need you to sign it too! Please help us to avoid these costly errors.

You need to bring your own bags to carry your items home. We have boxes, but do not have any plastic bags. A limited number of cloth bags will be available for sale.

If possible, consider walking, biking or bringing a wagon to pick up your order. If you are driving, please be aware that William Street is currently closed for construction between King Street and Euclid Street. You can access the Waterloo Town Square Parking Lot by Caroline Street, Alexandra Avenue, Willis Way or King Street by the LCBO. We have been asked not to park in the church parking lot.

**Please don't forget to pick up your order! At approximately 6:30PM, if you have not picked up your order, we will call the number you provided (when you registered) with a friendly reminder. At 7:00PM we will pack up your order and add the $15 packing fee to your order total.If you have not picked up your order by 7:30PM (or when we finish cleaning up) your order will be donated - and you still get the pleasure of paying for it. We need to receive payment for this week's order before you can order for the following week.

If you are not happy with what you receive, all claims for missing/damaged items must be made at the pick-up site before 7:00PM that same day. After 7:00PM all sales are final.

  • Carrot sizes - only bags of smalls are available. If you ordered other sizes, they will be substituted with smalls.
  • The discount on organic beef from Vibrant Farms is $2 off the total price of the roast or package of steaks. No Sirloin steaks are available.
  • We thought that we could offer bulk shelled peas again, but they are not available this week. Sorry!

Palatine Fruits
The following is a note about the soft fruits we will have this week:

We reached the end of the cherry season rather abruptly with all the rain last week! In a better weather year we could still have looked forward to varieties like the Reginas and Hudsons.....both lusciously big black sweet cherries. So we will need to set our thoughts to next year for those lovely cherries!

This week we have the Apricots, Early Golden plums and the Harrow Diamond peaches!!!

The Apricots are coming into full glory now as the season moves on! They again will be allowed to ripen on the tree and hand picked by only two people who are skilled in knowing just the right feel to the apricot!!

The Early Golden plums are the earliest variety of plum available to us. The have a bit of tartness from under the skin along with the sweetness of the flesh!

The Harrow Diamond peaches are a Very nice eating peach! Full flavour and sweet! They are not a free stone peach. The free stone peaches only come later in the season.

Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

Hi Folks,


Maybe I can keep this shorter this week because we do not have so many new exciting foods being offered for the first time. Good. I can't handle that much excitement all the time.  Sometimes food is not exciting, it is just important. Just need the right kinds of foods at the fingertips so that good meals are easy to make.  Matthew made a version of chili today that hit the spot. Chili in July, what next? It is so cool he even baked two pies! Peach, cherry custard pie - in case you're wondering.

Climate Change and the Buying Club
This weather is actually affecting the food on our plates, have you noticed? Have you experienced that before? It's kind of a new feeling when we are used to global shopping at the supermarkets where we can ALWAYS get EVERYTHING that we want.  Stuart didn't have enough sun shining in his greenhouses to ripen the grape tomatoes. How can I complain about that??

I was listening to Gwynne Dyer on Monday night (CBC Ideas) and was sobered again about climate change. I can't see it or smell it or feel it (unless a cold and rainy July IS climate change...) but it is real and serious.  When I feel overwhelmed by a huge and complicated issue like climate change, I find comfort in local food. It is one concrete life choice I can make that will make us stronger and more resilient so that we can handle the changes that are coming.  It feels good to know that if there is an interruption in the flow of global food (due to a pandemic or drought or whatever) we will still have an abundance of good food flowing into our Buying Club every week.  If 50% of KW families ate a diet of 50% local food, we could handle whatever breakdowns (and implosions) that happen in the global food system.  This is my vision -  my goal. 50% of KW families eating 50% local food.  When we get to this, we will notice that the fields will be less corn and soybeans and more a patchwork quilt of vegetables and legumes.  We'll see more greenhouses.  We'll see more local canneries and cheese makers.  We'll be able to find local carrots in April that have been stored in state-of-the-art cold cellars.  I can see it now.

What we are doing as a buying club group is not just cute or nice.  It is not a place to get "niche" items we can't get elsewhere - it is a place to feed ourselves because most of us don't have gardens big enough to feed us.  What is more important than fuelling our bodies, hearts and minds with good food?  We are also fuelling a movement that will affect how our children shop for food when they are adults.  We are fuelling social and economic change by choosing to eat local food. 

Is the Buying Club working for you?
Now, buying local food from Bailey's Local Food Buying Club SOUNDS good but how is it working for you day to day? Week to week?  I don't know about you but I ALWAYS forget to order at least something I need.  I've decided that I need to make a grocery list before ordering, just like I do/did for going to the grocery store.  How is the pick-up working for you?  This Friday we can offer the SELF CHECK-OUT option to all of you! We hope that this will help speed out the checking out for some of you who want to add up your total yourself.  We did all self check-out last year and now we are returning to our roots. Local Salad Dressing
No, I haven't found someone selling ready-made salad dressing. Any of you want to start a small business?  What we do have now are the perfect ingredients for easy local salads and dressings. At lunch I made a super easy and popular dressing my friend taught me (you can use any oil and vinegar varieties): Soybean Oil, gurgle of wine vinegar infused with raspberry, gurgle of maple syrup, gurgle of soysauce.  It was a hit on the chef salad!

New Items this Week
This week have new potatoes (at a lower price) coming directly from Lena and John Burkhardt who live near Paul and Saloma Bowman. Lena and John have been leaders in organic farming in the Old Order Mennonite Community.  Antony John of Soiled Reputations is harvesting swiss chard and a tatsoi called Yukina Savoy for us this week.  More peaches, apricots, plums and blueberries and a few raspberries.  Raspberries are harder for us to carry because we do not have a cooler and they perish so quickly. We can only buy from growers who are small enough they will pick our order Friday morning.  It is nearly impossible to find no-spray or organic raspberries due to many pests and diseases.  Ivan and Elmeda Brubacher are growing their raspberries for us without sprays at my request. I've promised that we'll buy all that they can harvest for us at a fair price. Last year they were hit hard by heavy hail. The raspberry canes are still damaged from that hail but Ivan said he'll have a few flats of berries for us.

We have organic blueberries this week from near New Hamburg. The Walkers have a lovely little blueberry patch out there (closest one around) and they've hired a nice young man, Zach, who will pick and deliver them to us. Thanks Zach!

Paul and Saloma are harvesting green beans for us this week! Yum! And Paul has hooked me up with a friend who can sell us uncertified organic carrots! I've been so hungry for fresh-from-the-earth carrots.  We're getting a 10 lb bag which we can go through in a week.  Matthew can eat a pound a day raw.  I hope he doesn't mind me telling you that : )  Four of you can get a half bushel (about 2.5lbs) of it this week if you want to steam and freeze it.

Golden Hearth is on vacation this week but you can still get marvy bread from Rundles (just none that are 100% local).  How did you like the crackers?  Which cheeses did they go well with? After cleaning up the buying club on Friday Matthew and I sat down with a plate of Neil's crackers, chevre goat cheese and a jar of hot cherry jam.  It was so incredibly good it made me feel like swearing.  For some reason it made me want to say "Go-olllllllyeee" just like Gomer Pyle.  Yes, and "Shazam!" It was so good I immediately made a few samples to take to the neighbours. I just had to share the joy.  Matthew and I often have "in-house" dates where we don't go out but ignore the dishes and the clutter and whoop it up and have a good time.  Well, this platter of crackers cheese and jam made this in-house date memorable.  It was better than anything we could've found in any restaurant. That sounds ridiculous when I write it but that is how it felt.

Sale on Organic Beef Cuts
We are offering a sale on organic beef this week.  You can take $2 off of any cut of organic beef (steak or roast) from Vibrant Farms.  Noah is also offering pepperettes for those of you who like to pretend that you are cowboys.  We are offering a couple varieties on the order form and bigger packages of 12 will be available on the spontaneous table along with summer sausage.  I don't need to tell you how awful the meat is from the factory farms, I'll leave that to  Michael Pollan and Food Inc.  I WILL tell you that this is beef you can feel good about eating. The steer spent many happy days grazing on a farm near St. Agatha and was slaughtered and processed at a licensed local facility.  Speaking of good meat. Have you seen the brochures from Traditional Foods on the Spontaneous Table that tell you why their meet is good for you and the land?  The animals are GMO and drug free and fed natural products and supplements. They treat their animals humanely and do not use factory farming methods.

Food Inc
Are you going to see Food Inc? I'm trying to get there Saturday night if I can get the order form ready in time.  Maybe I'll see you there.  Anything that sparks conversations about where our food comes from is a good thing.  If it is entertaining at the same time - bonus!

Baileys Local Food Buying Club - Weekly Pickup Reminder

If you put in an order this week it will be ready for you to pick up on Friday, July 24 from 3:30 until 7:00PM in Hilliard Hall at the First United Church at 16 William Street West in Waterloo. You can check your order by logging in at http://baileyslocalfoods.ca/ordering

Weather affected many of our items this week:

  • There will be medium eggs, pepperettes and summer sausage on the spontaneous table until 6pm or when Noah goes home.
  • Two Century was not able to provide plums so all plums are from Palatine
  • We will not have enough cherries or peaches to fill all the orders. Quantities will be adjusted so everyone gets some.
  • We almost had NO blueberries due to the weather. We should get some if it does not rain tomorrow, but the prices will increase slightly.
  • No cherry tomatoes or organic blueberries. They need heat and sun too!
  • No honey due to not meeting minimum order amount.
  • We may not have grains from Oak Manor due to minimum not being met.
Produce bags
Some items are sold by the litre box. The boxes we have are for measurement only. Please bring small bags to bring these items home in.

A Message about Local Soft Fruits
Due to the lovely weather the fruit has been picked in the rain this week. Please let it dry out and ripen completely.

Peaches need to be picked before ripe to survive going in a box. They then should be spread out on newspaper on their side or bottom (not face down) and they'll ripen over the next few days. You can go through and do a squeeze test and pick out the ripe ones each day.

All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. The shelled peas will be picked, shelled and packed on ice on Friday so they will be VERY fresh! Please remember the shelled peas spoil easily so they need to be eaten or frozen as soon as possible. Peas are very easy to freeze so you can have them all winter long. If you spread them on a cookie sheet to freeze them, they come apart easily and can then be put into smaller portions to meet your family's needs!

Palatine Fruits
If you want to be sure to receive fruits from Palatine, please order ASAP. Cherry harvest is affected by many things, rain included, so the earlier they know how many pounds of cherries (and other fruits) we need, the better chance we have of filling all your orders. We're working through our cherries this week We have been busy eating, sharing, dehydrating, making ice cream and I'm sure we'll eventually make jam out of them too.

More Cheese!
We've ordered more feta for this week so that we will have enough for those who missed out last week. We also now have goat's milk Chevre from http://www.cestboncheese.com/ as well as cow's milk Parmesan and Asiago from Millbank. I'll have to get the Asiago for my mom - it's her favourite cheese. Asiago is prett tasty coarsely shredded over a salad or finely shredded over soup.

Whey Butter - way better!

Golden Hearth Vacation

The good folks st Golden Hearth are taking a well deserved vacation. We will not be able to offer their breads and treats on August 24th. Please stock up this week. Aura says that their Ultimate Ginger cookies last about 3 weeks (if you don't eat them first)

Blueberries
We got an email from E-Z Grow farms today saying that they need some time without rain to pick berries for Friday. Let's hope that the weather cooperates with us!

I'm still waiting on pricing from Walker's Organic Blueberries but will put them on the order form anyway. Please know that the prices listed may be adjusted to reflect the actual cost.

Arva Rye
Arva sent a message that in some years all of their rye is local. This year, however, about 50% of their organic rye is local but the other half comes from Manitoba.

Will local food be boring some day? I'm just so excited every week about what we are able to offer. Do I sound like a broken record? I just have to tell you the exciting news for this week: We found more almost 100% local breads! And local crackers!! I found a farmer who will deliver sour cherries! We even will have local soy oil and soy sauce this week!

100% Local Bread?
Okay, let me back up and tell you how great it is that Neil from the Rundles restaurant in Stratford is going to begin using flour and grains from Arva Flour Mills this week.  So the Sourdough and Multigrain Sourdough are mostly local.  We're estimating that the Sourdough is 95%.  It may be 100% but we do not know where the rye is grown.  I'm hoping to hear back from Brant Flour Mills on this.  The Multigrain is a little less local because it has a grain mix in it from Arva Flour Mills that includes cornmeal (milled in St. Louis, MO). I'd estimate 80%.  The Olive Bread is 96%.  These are FINE breads, folks. I think I'm a good bread baker but my loaves never turn out this amazing.  Neil is also making local crackers just for us! So if you think that local crackers are a good idea, tell him by buying his crackers. He is offering a Multigrain Seminola Cracker that is 70% local. The ingredients are: semolina flour (grown in western Canada), cornstarch (not local), grain mix (here's some hard core research below for those of you who like details):
  • Large Flaked Oats - Grain Millers Canada, Yorkton, SK

The crackers also contain: flax seed, oat flour, whole wheat flour, butter, cumin seeds, and milk from Harmony.  These are not like Ritz crackers. They are more like wheat thins but a bit crunchier and heartier and I'm sure they would be excellent with goat cheese and hot peach jam but they have not lasted long enough for me to try that combination.

Sour Cherries
I just found a sour cherry farmer who I am looking forward to meeting. We've been corresponding over email and I got references from another buyer recommending him.  Their names are Duncan and Sue Smith and their farm is called Two Century Farm in Grimsby (see http://www.twocenturyfarm.com/).  They are not organic but "low-input" which means that they spray only when they need to.  Their reference said that theirs is a "heritage orchard" which means that they offer unusual hard-to-find varieties of fruits.  Some of you have been asking for sour cherries. We can get them from Duncan and Sue fresh or already pitted in pails!

Soy Oil and Soy Sauce

In addition to the canola oil from Pristine Gourmet, we are offering soy oil and soy sauce. The soy sauce ingredients are: soybeans, water, salt, brown sugar, wheat flour.  They used their own soybeans for the soy sauce and partnered with an artisanal producer to make it.  We will be picking up more canola oil and wine vinegars from Pristine so these will be offered this week as well.

New Goat Cheeses
We can now offer you Chevre, Parmesan, Brick, and Feta goat cheeses from Mornington. YUM!

Blueberries
We are buying high bush blueberries from two farms this year (sometimes called domestic blueberries). One is a tiny organic blueberry patch near New Hamburg, the Walkers. The other is a farm with 30 acres of blueberries near Simcoe (Langton) called EZ Grow Farms. This farm is run bythe 3rd generation of Darryl Zamencik's family.  They use best management practices and follow OMAF guidelines. It is a conventional farm. The berries are 100% hand-picked.  Blueberries are super easy to freeze (just throw into bags and freeze) so buy enough for the whole year. 

Local Tea in your Backyard
I've been experiencing such ridiculous joy at picking a handful of leaves for a pot of tea.  It is a beautiful example of a local food.  I put a pot of water on to boil and then ask whichever kid is nearest to join me in finding leaves for the tea. In the backyard we can find raspberry leaves, clover, alfalfa and mint.  I'm trying to get up the nerve to make tea with thyme and catnip. I had that at the Working Centre's cafe and it was delish.

Lettuce Season
You may think it is cherry season but I'd like to declare it salad season with cherries for dessert.  This wacky cool summer weather means that we can eat sweet (not bitter) lettuce in July. So think: big chef salad with hard boiled eggs, sliced beets, ham, grape tomatoes, cucumber slices and garlic peanuts on top.  Think taco salads and "Strawberries and Almond Spinach Salad" with cherries and Boston lettuce.  Selema had to guess how much lettuce we would buy.  She has worked hard to raise lots of LOVELY heads of lettuce for us so let's thank her by featuring lettuce salads in our meals for this week, okay?  She really is very skilled at raising lettuce. I don't know of other farmers who can keep the heads so nice all year and so sweet. She has lots of romaine and Bostons.

Tortillas and Tamales
We'll be offering these items from McKechnie foods every two weeks. So when you order, order enough to last you two weeks. The whole wheat tortillas are especially soft and supple and lovely to wrap around things. I've been curious how Doug McKechnie ended up making tortillas and tamales. His uncle (or his sister's husband's uncle... I've lost track) started a tortilla business years ago so they knew that there was a market for these items.  So he started up a similar business with his sister. She is now farming full time but still makes the tortillas for him.  He has hired people experienced in making Mexican foods so that is why the tamales and such taste so authentico.

Self Check Out

Wish you didn't have to wait in line? We will be piloting a self-check out system.  This week we will shoulder-tap about 20 people to do the self-check out. Then we'll iron out any kinks and offer self-check out to all of you in the weeks to come. Watch for more details next week!

Soft, Fragile, Odd, Fruit
Just a quick reminder about the perishability of soft fruits and berries. Don't assume that they'll last. Enjoy them right away or watch them very carefully for signs of mold or spoiling.  Because we often buy fruits that are sprayed less, they spoil faster than fruits coated in fungicides and waxes.

Another reminder - All the fruit we get from Eva and Rene at Palatine are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

Cool Enough for Baking?
How about instead of complaining about the weather, bake something yummy instead.  We have more flours from Arva Flour Mills thanks to Janet who will pick up the order for us. Each one has a different story of origin.  Some are grown out West and milled here. I was sad to hear Mike, the miller at Arva, say that Canada doesn't have a cornmeal mill anymore. He can only buy cornmeal from St. Louis (US) now even though some of the corn is from Canada.  He is working on starting to mill white corn for Hominy Cornmeal and Corn Flour.  When he gets this going, I hope to connect him with Doug McKechnie who can start using this local corn flour/meal for his tortillas and tamales.  Sometimes I feel like I'm in a matchmakers role. I'm introducing suppliers and processors in hopes that they'll work together. This week we have a wonderful "romance" of Neil Baxter beginning to bake with Arva Flour Mills products! Look for flax seeds (local), whole wheat and soft flours from Arva.

Local Bubbly Anyone?
No, not champagne, sparkling apple juice! In different flavours. This lovely juice is 100% juice and made near Simcoe by the folks at The Cider Keg.  My daughter Mona has declared it her favourite juice.  I'm looking forward to trying the sparkling apple cider with rhubarb.

Last Friday went so smoothly and calmly. I don't know if it was because of the rain or because many of you tried to come later in the day, but we never had crowds or line ups.

I'm off for a few days away at my in-laws hobby farm. Baileys Local Food Buying Club - Weekly Pickup Reminder

If you put in an order this week it will be ready for you to pick up on Friday, July 17 from 3:30 until 7:00PM in Hilliard Hall at the First United Church at 16 William Street West in Waterloo. You can check you order by logging in at http://baileyslocalfoods.ca/ordering.

Some notes about this week's items:

  • Look for Potatoes, Swiss Chard, Mint, Red Currants and Strawberries on the Spontaneous Table this week!
  • Due to the cooler weather we will not be getting the shelled peas from Niagara this week.
  • Snap Peas in 1/4 lb bags will be provided by Soiled Reputation this week
  • Bulk Snap Peas were not available from Pfenning's this week
  • There are no bouquets of flowers or Sweet Dreams Tea. Sorry!
  • The goat's milk feta was very popular. We were able to get 24 of the 30 ordered. It will be available again next week as will tubs of local chevre.
Produce bags
Some items like peas and cherries are sold by the litre box. The boxes we have are for measurement only. Please bring small bags to bring these items home in.

A Message about Local Soft Fruits
Local fruits are fragile because they are picked ripe rather than unripe and are not preserved with waxes, chemicals and gasses.  We do not have a huge refrigerator to keep all the fruits chilled.  When you order fruit, expect to have to use it right away or watch it like a hawk for when it is perfectly ready to eat/can/freeze. Peaches, for example, come to us a few days under ripe so that they can be picked and put into baskets without smooshing and rotting immediately. 

We recommend only ordering the quantity of fruit that you are ready to eat or process immediately. Maybe you'll get away with waiting until Saturday morning for somethings, but no guarantees. Our policy is that if you notice that you do not like the look or quality of fruit/food from us, we need to hear that before 8 PM on Friday to be able to refund your money.  If you notice on Saturday morning that your plums need to be frozen immediately and you do not have time, you can see that as an opportunity to bless your neighbours and relatives with fresh plums. 

We will pass on storage tips for fruit as it comes in.  For cherries, it is good to chill them immediately. So if you have a big box, take them out of the box (which is insulating) and put them into smaller plastic bags in the fridge so that they can cool quickly. With the extra wet weather, many fruits are even more susceptible to splitting and spoiling in storage.

You will find a pickup slip with your name on it listing the items that you ordered this week. Pick up all your items (including those in the fridges and freezer), check out our spontaneous table then head to our checkout area.

We will have extra items for you to purchase on our Spontaneous Table in front of the blue cupboards just in case you forgot anything. Anyone can purchase items from the Spontaneous Table. You don't even have to be a Member!

We will have cookies for sale this week, so bring some extra change for a treat. There will be room to socialize and mingle. Expect your pick-up to take awhile.

In out checkout area, please help us and our volunteers by removing all items from your bag for the checkout process. Please be patient as this area will likely be quite busy.

We accept payment in cash or cheque (made out to Bailey's Local Foods). The total from your shopping cart is always approximate. We will try to ensure that you only pay for the items available this week as local food can sometimes be unpredictable and items that are priced by the pound are approximate on the order form.

When writing cheques, please ensure that the date is correct (it's 2009!) and that the numbers you write (digits and words) match. Also, if you make your cheque out to anything other than Bailey's Local Foods the bank won't cash it. We need you to sign it too! Please help us to avoid these costly errors.

You need to bring your own bagsto carry your items home. We have boxes, but do not have any plastic bags. A limited number of cloth bags will be available for sale.

If possible, consider walking, biking or bringing a wagon to pick up your order. If you are driving, please be aware that William Street is currently closed for construction between King Street and Euclid Street. You can access the Waterloo Town Square Parking Lot by Caroline Street, Alexandra Avenue, Willis Way or King Street by the LCBO. We have been asked not to park in the church parking lot.

**Please don't forget to pick up your order! At approximately 6:30PM, if you have not picked up your order, we will call the number you provided (when you registered) with a friendly reminder. At 7:00PM we will pack up your order and add the $15 packing fee to your order total.If you have not picked up your order by 7:30PM (or when we finish cleaning up) your order will be donated - and you still get the pleasure of paying for it. We need to receive payment for this week's order before you can order for the following week.

If you are not happy with what you receive, all claims for missing/damaged items must be made at the pick-up site before 7:00PM that same day. After 7:00PM all sales are final.

New Potatoes from Pfenning's
There are half bushels of white, yellow and red new potatoes available from Pfenning's this week. Paul ran out of last year's potatoes. That is why we were short last week. Sorry again for the inconvenience.

Bean orders
I got a call from Steve Rounds of Hillbilly beans today. He was on vacation last week and did not get my email order and phone calls until today! He assured me that he is able to deliver beans, peas, lentils and barley (under grains on the order form) for us this Friday, so go ahead and order! We currently have some mixes that have non-local beans in them. Bermuda Bean Salad Mix and Trail Blazer Beans in 1 lb bags contain non-local Chick Peas and/or Lima beans. If we offer these mixes in the future they will be mixed without the non-local beans. Steve also has Adzuki beans in stock as our members have shown interest in them!

Mint from Little City Farm
Karin will have bunches of mint available this week. It is not on the order form yet, but watch for it when she confirms the quantity she has available.

Meat and Cheese prices are approximate on our order form
The exact price of the piece of cheese or package of meat that you choose will be added to your total on Friday. Please ensure that these items are available when you check out so we can add them to your total.

For those of you participating in the 100 mile challenge, please be aware that our products are not all 100% local. The fruit and vegetables are grown within 100 miles (160.9 km), but our processed foods are processed locally with a majority of local ingredients, where possible. Please ask if you are unsure of an item.

Bailey's Buying Club - Ordering is now open for July 17, 2009

Whew! That was MAYHEM! A state of rowdy disorder. I soooo appreciate those of you who took it in stride and enjoyed talking with the people near you in line. When I apologized to one of you for the long line, you said "Nah! This is great. It's a hub of community energy!" Thank you for that positive angle! I also want to thank the Kind Soul who cleaned up the glass my son Foster broke at the kids' snack table. You are an angel.

Why are we working with Traditional Foods

Let me tell you about Traditional Foods and why we are still working with them even though they are disorganized and were so late yesterday. Noah and Bruce (sitting on the back of the pick-up truck on Friday) are part of a group of farmers working together who all use an agreed upon "natural" method of farming which means EXCLUDING vaccines, hormones, GMO in the feed, and antibiotics and INCLUDING a program of natural supplements for soil and animals (think of it as fish oil and flaxseed supplements that we might take). They are in a time of transition as they find a new driver and someone to coordinate the sales, inventory and deliveries. I want to work with them because they are a group of small farmers working together that can provide us with more than any one farmer can do alone. From Traditional Foods we can get beef, pork, chicken, eggs, mesclun mix and maybe flour and natural chicken feed (for backyard hens) in the future. Buying from them means we are encouraging cooperation which leads to stronger small farms and stronger rural communities and a more secure local food system. If you know someone who would be interested in being a driver for Traditional Foods, email me. This person needs a van or truck with a hitch and needs to be available most of the day on Fridays. It would be a great way to get to know these farmers. I have pamphlets from them for you to pick up next week.

I also have a soft spot for Amish farmers since I grew next door to an Amish community in Indiana (my dad taught in an Amish school for 23 years). I want to see Amish farmers succeed despite the push for the convenience of technology and the "bigger is better" mentality of the current agricultural system. Another neat thing about Traditional Foods is that they get their eggs graded at a facility that employees people with developmental challenges. We want to support businesses that hire people with all sorts of different abilities. I'll post pamphlets about this egg-grading program on the church bulletin board next to the kids' snack table. I'll also put up the two articles about Bailey's Local Foods that were in the local papers in case you didn't see them. How can we make this model work?
If any of you are able to come after 4:30, that will help because it is pretty calm and quiet from 5-7. If you are able to pay with cheque, that is handy for us. Cash is okay too, we just prefer cheques. To speed things up and decrease confusion, we'll put a volunteer by the fridges and freezer who can hand you what you are looking for. If you'd like to volunteer for this role a couple hours here and there, let us know. If you'd like to volunteer for another role, let Rachael or I know too. Such as playing the piano during pick up (there was a grand piano there yesterday!), setting up, check-out, and cooking us meals. Just kidding. Sort of. If you want to bring us supper on Friday, we might have to kiss you.

A Profit and Learnings
The good news is that Rachael and I were able to pay ourselves the week of July 3! We had 200 orders July 10 (started with 95 on May 29) so the gross profit was high enough to leave enough of a margin to cover expenses and pay Rachael and I for some of the time we have worked. We are learning how to improve this model each week. Yesterday we learned that we need to only use one unit of measurement for peas (not pounds, quarts AND litres) and that more room was needed for people to scoop out their litres of cherries. We also learned that it worked better to have the cheese in the coolers instead of the fridge.

Awesome video clip on local food
A buying club member passed on a link to a powerful and snazzy little video that is part of the Eat Real, Eat Local campaign by Hellman's (of all companies). But hey, if large corporations give us a cute and powerful tool that works to convert people to the importance of eating local food, let's use it! I showed it to my kids (1, 3, and 7 and they loved the animations) http://www.stimulantonline.ca/stimulus/1048/eat_canada.html This is the kind of tool that is handy for book clubs, Sunday school classes, workshops and other places you may be discussing the importance of local food.

Meal ideas
Okay, meal ideas for this week. Well, with this cool weather we've been having, it makes me want to simmer a pot of soup. I've got a pot of chicken broth (from leftover bones of supper last night) into which I'm going to throw some lentils, peas, and dill. I'm into simple meals, can you tell? For supper I'm going to make a fake lasagne with lots of local basil, hamburger, cheddar, kale, green onions. No tomato sauce, just slices of tomato on top. I have local noodles from last year that I'll use. We're still working on finding someone who will make us noodles from local flour. I DID find local semolina flour from Arva Flour Mills! So that brings us one step closer.

Features this week
Noah recommends trying the ham steaks on the grill. He says that they are ¾ inch thick and uncured. He also recommends the stewing beef used as "kebabs". Traditional foods has 10 more chickens at the sale price of $2.50/lb. Noah has lowered the beef patties price by $1 to encourage you to try them. Peas shelled and ready for your freezer!
I'm sorry this email is getting sooo long but I HAVE to tell you about this window of opportunity to put enough peas away for winter without needing to shell them! The woman who delivers us the fruit from Palatine has a connection with an organic farm that has a pea sheller. So they grow the peas, shell them and all we have to do is throw the bags in the freezer. They come in BIG 10 pound bags. If I have time I'll put them in four smaller bags but I didn't have time for that last year and I could just give the bag a whack and enough would come loose to pour into the pot for supper. They do make an interesting foam on top when boiled (kind of like when you boil beans but less) but it rinses off and did not slow us down in eating them several times a week. We never know how long these peas will last so get them while you can. I had five bags in the freezer last year and we ran out in February.

Some of you were asking for bulk shelling peas. We have not connected with a farmer who has enough for bulk sales. We may be able to get large boxes from Pfenning's.

Feta
We have feta now!! Millbank is able to deliver feta from Shepherds Gourmet! Just in time for the tomato and cucumber salads. See their website for more details on the feta http://www.shepherdgourmetdairy.com/

Flour update and London
We'd like to buy flour from Arva Flour Mills more often but it is a long trip for a trunk full of flour. If you are going to London anyway and are willing to help out by picking up a small load of flour, let me know. I need a couple days notice to place an order. We've updated the Oak Manor products to show you which are local at this time. In the Fall more of them are from within 100 miles but when the supply runs out Perry has to go further afield to find organic grains. The oats are from northern Ontario right now.

New cherry price
We guessed that a litre of cherries was one pound but it is actually 1.5 lbs. So we need to raise the price a bit. Consider the first week a "special" on cherries. I have a quick tip for pitting cherries from a buying club member: Freeze cherries with pits intact. Once thawed, push the flat edge of a chef's knife over top, and the pits slip right out. I asked for more details on how Eva and Rene of Palatine manage their orchard. I had understood that they farm without chemical sprays but they do use them on occasion. Here is a description from Mary Jane who delivers the luscious fruits to us:

Eva and Rene do farm as organically as they can. But that does not mean no sprays. Even organic farmers have to use sprays. Eva and Rene do use fungicide and pesticide, but so do organic farmers. It is just that under organic convention the fungicides and pesticides are less toxic such as sulphur and neem oil (which Eva and Rene use heavily). Rene will start with the least toxic form of spray first, and move up if need be. They do leave themselves the option to use 'regular' fungicide if absolutely necessary (Since he eats his own fruit he really tries not to). They never use a 'pre-pick' fungicide that the other farmers use, which is meant to follow the fruit into the stores and storage...

For pests they use something called Integrated Pest Management (IPM). Same principle as above....they check to see that they have pests before spraying. They do not do preventative spraying. They will start with the least toxic spray to address that particular pest. They also use pheromones (which is not a spray) to 'fool' the little guys and disrupt their cycles! Most of these sprays that he uses also would be acceptable under certified organic!

Fertilization is also organic. They do not use chemical fertilizers that deplete the soil.

Why sometimes no honey or maple syrup?
If we don't meet our minimum of $100 in orders, we don't place an order with the farmers who provide us this sweet liquid gold.

We accept payment in cash or cheque (made out to Bailey's Local Foods). The total from your shopping cart is always approximate. We will try to ensure that you only pay for the items available this week as local food can sometimes be unpredictable and items that are priced by the pound are approximate on the order form.

When writing cheques, please ensure that the date is correct (it's 2009!) and that the numbers you write (digits and words) match. Also, if you make your cheque out to anything other than Bailey's Local Foods the bank won't cash it. We need you to sign it too! Please help us to avoid these costly errors.

You need to bring your own bagsto carry your items home. We have boxes, but do not have any plastic bags. A limited number of cloth bags will be available for sale.

If possible, consider walking, biking or bringing a wagon to pick up your order. If you are driving, please be aware that William Street is currently closed for construction between King Street and Euclid Street. You can access the Waterloo Town Square Parking Lot by Caroline Street, Alexandra Avenue, Willis Way or King Street by the LCBO. We have been asked not to park in the church parking lot.

**Please don't forget to pick up your order! At approximately 6:30PM, if you have not picked up your order, we will call the number you provided (when you registered) with a friendly reminder. At 7:00PM we will pack up your order and add the $15 packing fee to your order total. If you have not picked up your order by 7:30PM (or when we finish cleaning up) your order will be donated - and you still get the pleasure of paying for it. We need to receive payment for this week's order before you can order for the following week.

If you are not happy with what you receive, all claims for missing/damaged items must be made at the pick-up site before 7:00PM that same day. After 7:00PM all sales are final.

Notes about this week's items:

Cherries
It turns out that we have our choice of TWO kinds of sweet cherries this week! Lapin cherries are a larger sweet black cherry and Hedelfingen are a bit smaller cherry with a good flavour. You can see some pictures of cherries online at http://www.omafra.gov.on.ca/english/crops/facts/cherry_gallery.htm. Existing orders will be filled with Lapin cherries.

Chicken on special from Traditional Foods
Sorry about the chicken confusion. We have roasting chicken on special this week. Roasters are younger than stewing chickens (younger means more tender). They are whole chickens, 5 lbs or larger for $2.50 per pound. They are on the order form under "meat".

Wild Grape Leaves
Kain of Little City Farm is offering Wild Grape leaves (with recipe). You can get a bag of 10 large leaves for $2.50. They have been added to this week's order form under "other".

Soiled Reputation Basil and Snap Peas
We guessed at the price and quantity of Antony's Basil and we were wrong. Antony is offering basil tops for $6.25 per 1/2 lb. This is quite a lot of basil, since the leaves are so light. We have asked him to package 1/4 lb bags for $3.25 to fill your existing orders.

Antony's Snap Peas may not be ready this week. We should be able to get Snap Peas from Pfennings if this is the case.

Meat and Cheese prices are approximate on our order form
The exact price of the piece of cheese or package of meat that you choose will be added to your total on Friday. Please ensure that these items are available when you check out so we can add them to your total.

For those of you participating in the 100 mile challenge, please be aware that our products are not all 100% local. The fruit and vegetables are grown within 100 miles (160.9 km), but our processed foods are processed locally with a majority of local ingredients, where possible. Please ask if you are unsure of an item.

Bailey's Buying Club - Ordering is now open for July 10, 2009

Did you celebrate Canada Day by sharing local food? We didn't. We went out for Chinese. We DID celebrate two family birthdays this week with local sausages, hot dogs, buns, and DELUXE salads. Glorious feasts. Matthew accidentally discovered a great twist on the traditional broccoli salad. He put the Brick Hot Pepper cheese in the broccoli salad (you know the one, with bacon) thinking it was sundried tomato and garlic cheddar. The bits of hot zingy cheese in the salad were extremely tasty!  You might want to warn the old ladies if you bring this version to the church potluck. No, I'm kidding. It wasn't very hot. Just a nice zing.

Do you feel like you are living in a rain forest? Imagine farming in this wetness! Selema said that the iceberg lettuce is rotting in the fields from the bottom up. The other head lettuces are faring better, thank goodness. Saloma Bowman said that the strawberry pickers (mostly teens) were out picking in the rain with plastic bags over their heads and as improvised rain coats. She said that they made it fun by slipping in the mud. The sun this weekend is much needed to dry the fields out and ripen the fruits and vegetables.  Farmers are cautious to drive tractors in or even walk in wet fields.  Walking in wet fields compacts the soil which makes it harder for roots to spread out and find the nutrients that they need.

Cherries this week?
Speaking of ripening fruits.  We MAY get the first sweet cherries this week!! Our first fruits from Niagara! Those of you who were not a part of the buying club last year are in for a nice surprise. We offer fruits from Palatine Fruit and Roses in Niagara that are better than any soft fruits I've ever had before. They do not use chemicals. They pick the fruit at the perfect time for us and they grow varieties of many things that we cannot find in stores.  So go ahead and order your first cherries. They offer them in 10 lb or 20 lb boxes. 10 lbs of cherries may sound like a lot but they are gone in about three days in our house - just eating them fresh!  If you are wondering how to pit a lot of cherries to freeze them or make jams, pies, etc..., my mom uses a bobby pin. She pokes the curved end in and hooks the pit and pulls it out. I have a pitter I picked up at a garage sale but it is not much faster than the bobby pin. I also just tear them in half with my fingers and flick out the pit. It is juicy, red-staining work. I look like I just butchered a chicken with my bare hands when I'm done. I froze just one big bag of cherries last year and they were, of course, my favourite kind fruit to use in a smoothie and milkshake. We also offer cherries in litre baskets.

Deli meats and Sundried Tomato and Feta Sausages

We are offering Stemmler's deli meats and hot dogs again this week. They have changed the "rub" they put on the deli roast beef so that it does not contain sulphites anymore.  We are also offering Sundried Tomato and Feta Sausages from Stemmler's. The feta and sundried tomatoes are not local but they are SO DARN GOOD. They have basil in them too, which is a lovely touch.

Hot Chili Sauce is a winner

If you are like me you just got a jar or two of the new preserves from Edna and Melinda of Country Flavour we offered last week to begin your taste-testing. The Hot Chili Sauce is REALLY GOOD. I'd use it as a salsa even.  Now I know that I want to have a couple jars in the pantry ready to pull out.  We won't offer the full selection every week but we are again this week.

Gifts of local food
Have you thought about giving local food as gifts these days? A bottle of maple syrup is always a welcome gift (unless the recipient is diabetic).  Now that we have so many relishes and jams from Country Flavour, you could give an assortment of four in a basket or box.  A small jar of honey would fit in that mix too.

Special on Natural Chicken
Traditional Foods Farms has an abundance of chicken in their freezer from last Fall that they need to move out to make room for this year's chicken.  They raise their chickens without vaccines, hormones, or chemicals.  This week you can get these whole chickens on special.

Bread from Neil at Rundles
I know that a lot of you like whole grains so we are adding a multigrain to the breads offered from Neil.  A highlight of my day (Friday - pick-up) was standing at the counter in the kitchen and tearing off chunks of the sourdough from Neil, dipping it into plain cream on top yogurt and trying to eat it without dripping on my shirt.  Have you tried dipping bread into plain yogurt? It is so satisfying and simple and perfect. A friend exposed me to the combo in high school and I've loved it ever since.

Eggs in Different Sizes

Why do most people want large eggs? Chickens lay a variety of sizes of eggs. We are now offering different sizes of eggs to help Farmers sell the other sizes. You get more bang for your buck with the small eggs. They are less than half the price of the large eggs AND are more than half the size of the large.

Baileys Local Food Buying Club - Weekly Pickup Reminder

Happy Friday!

If you put in an order this week it will be ready for you to pick up on Friday, July 3 from 3:30 until 7:00PM in Hilliard Hall at the First United Church at 16 William Street West in Waterloo.

Please note: When writing cheques, please ensure that the date is correct (it's 2009!) and that the numbers you write (digits and words) match. Also, if you make your cheque out to anything other than Bailey's Local Foods the bank won't cash it. Our volunteers will be checking more closely this week, but please help us to avoid these errors.

Some notes about this week's items:
  • HTC: Traditional Foods is going through a transition this week. We hope to fill your meat orders, but can't confirm this right now.
  • Red Potatoes from Pfenning's are not available
  • Raspberry jam will be available when raspberries are ready
  • Garlic dills will be available in August
  • Lydia did not have enough Asparagus, so Paul and Saloma will be providing enough to fill all your orders
  • All of our Strawberries are from Paul and Saloma Bowman this week
  • Rhubarb will be provided by Paul and Saloma this week
  • Paul did not have enough Broccoli Firsts, so Lydia will be providing enough to fill all your orders

Due to construction on William Street you may have to cross a stream of water that runs through the parking lot. Please wear appropriate footwear to reach the church and your order!

You will find a pickup slip with your name on it listing the items that you ordered this week. Pick up all your items (including those in the fridges and freezer), check out our spontaneous table then head to our checkout area.

We will have extra items for you to purchase on our Spontaneous Table in front of the blue cupboards just in case you forgot anything. Anyone can purchase items from the Spontaneous Table. You don't even have to be a Member!

We will have cookies for sale again this week, so bring some extra change for a treat. There will be room to socialize and mingle. Expect your pick-up to take awhile.

In out checkout area, please help us and our volunteers by removing all items from your bag for the checkout process. Please be patient as this area will likely be quite busy.

Special Strawberry Offering!

And we thought that strawberry season was over!

Paul and Saloma are able to fill your berry orders for this week and still have an additional 40 flats of organic strawberries available for this Friday! If you would like to freeze berries, make jam or just eat them while they are in season, this is your chance.
